Bird Nest Cookies

This recipe involves two of my favorites…Cadbury Mini Eggs & No-Bake Cookies! Here is a reason to stock up on Cadbury Mini Eggs at all the after-Easter candy sales. These Bird Egg Nests are a very cute treat, a great kid-friendly cooking activity, and easy to make ahead of time for an upcoming event! 

Bird Nest Cookies

Ingredients:

  • 1 Bag of Cadbury Mini Eggs
  • 1/2 cup Butter
  • 1/2 cup Milk
  • 2 cups Sugar
  • 1/3 cup Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 3 cups Oats
  •  Muffin Tin
  • Non-Stick Spray

Directions:

1. Lightly grease the muffin tin with a non-stick spray. Combine the butter, milk, sugar, cocoa, vanilla extract, and salt in a pot until the ingredients are all melted and stir smooth. Add in the oats and mix together well. Remove from heat.

2. Scoop the no-bake cookie mixture into the greased muffin tin. Fill to about 3/4 full. Place the muffin tin into refrigerator to allow the nests to firm.

3.  Remove the muffin tin and use the back of a measuring spoon to press down and form the middle of each nest. Place a few Cadbury mini eggs into each nest to complete. (*Note: If you want to freeze the nests to use at a later time, leave them in the muffin tin without the Cadbury Mini Eggs. When you are ready to serve them, remove and allow them to defrost at room temperature; then fill with eggs.)

    We used to make these as kids with lo mein noodles and butterscotch chips. This version looks yummy!

    • Alicia- I have seen the other recipe with lo mein but have never tried it. Now you’ll have to make this version and let me know which way is better! :)
