Brownie mix is a staple around our home. I love to have it on hand in case of “emergencies.” Those tragic times range from recovery from an extremely rough day, to a treat for a spontaneious get-together with friends. I am the “corner brownie lover” married to the “gooey-center brownie lover.” A true match made in heaven! So, when I used our brownie mix to make these crunchy-edge and gooey center cookies, nothing could have been more perfect for us!
Ingredients:
- 1 (19.8 ounce) package of fudge brownie mix
- 1 cup all-purpose flour
- 1 egg
- 1/2 cup water
- 1/4 cup vegetable oil
- 1 cup semisweet chocolate chips
- confectioners’ sugar
Directions:
1. First, combine brownie mix, flour, egg, water and oil in a large bowl; mix well. Add in chocolate chips.
2. Place confectioners’ sugar in a separate bowl. Drop batter/dough by tablespoonfuls into sugar; roll to coat. Place 2 in. apart on greased baking sheets. Bake at 350 degrees F for 8-10 minutes or until set. Remove to wire racks.
*Note: This can be messy as the batter is sticky and runny until coated by the powdered sugar. They are worth the mess though!
