Carmelitas

The word on the street is that Carmelitas are pretty much the most amazing dessert bar EVER! That’s a pretty strong statement to make to a dessert lover, so ever since hearing this I have been looking for a great reason to bake a batch in which the boys and I wouldn’t be the only one eating them since my husband is not a huge caramel fan (sinful not to like caramel right!?). So after looking through a few recipes my friends have been pressing me to make, I combined a few, tweeked a few to come up with what I am pretty sure is the most awesome Carmelitas recipe. 

What is a Carmelita you ask? It is like the most delicious oatmeal cookie layered with chocolate chips, then layered with gooey melted caramel, then topped with that same delicious oatmeal cookie crumbled on top. Yea… it even sounds dangerous right!? 

My friends and neighbors who came to the Werther’s Original Caramel Baking Bash last Sunday had never tried or baked them before either, and were excited to try out a new recipe! All of us were excited to try them as they were fresh out of the oven and no one was disappointed! They were fantastic, and perfect with a huge glass of cold milk or scoop of ice cream! This is one recipe that will have everyone asking for more!

Ingredients:

  • 32 Unwrapped Werther’s Original Baking Caramels
  • 1 1/2 cup Heavy Whipping Cream
  • 2 1/4 cups Butter, melted
  • 2 1/4 cup Brown Sugar 
  • 3 cup flour
  • 3 cup rolled oats
  • 3 teaspoon baking soda
  • 12 ounces semisweet chocolate chips

Directions: 

1. Combine caramels and cream in a small saucepan over low heat. Stir until completely smooth; set aside. {Do not overcook; overcooked caramel will result in a tough caramel layer in your bars!} 

2. In a separate bowl, combine melted butter, brown sugar, flour, oats, and baking soda. Press 2/3 of the oatmeal mixture into the bottom of an 9×13 pan. Bake at 350 degrees for 10-12 minutes.

3. Remove pan from oven and sprinkle chocolate chips over bottom layer. Pour caramel mixture over chocolate chips. Crumble remaining oatmeal mixture over caramel. Return to oven and bake an additional 15-20 minutes, until the edges are lightly browned.

4. Remove from oven and cool completely before cutting. Serve and store at room temperature.
