Red Velvet Crinkle Cookies

I first became hooked on the flavor of Red Velvet on my first visit to Sprinkles Cupcakes. Since then, I am been sampling Red Velvet everything in hopes that it might compare.  Although, anything rarely comes close, Red Velvet Crinkle Cookies are refreshingly similar and much lighter without the mound of icing (which I could do without). 
With Valentine’s Day just around the corner, I baked up a batch of Red Velvet Crinkle Cookies, very similar to my Brownie Crackle Cookies. I love the sweetness of the powdered sugar on crinkle cookies is a perfect replacement for the icing on Red Velvet cupcakes or cake, but the soft chewiness is still in every bite! 
As of recently, Big Brother is “very into Power Rangers’ and in particular the Red Ranger. He was thrilled when I made “him” a batch of these “Red Power Ranger Cookies”! He immediately took a few over to our new neighbors and told them he made them Power Ranger Cookies. {Can’t you imagine their slight fear!?} I made my husband follow him to reassure our neighbors that they were safe to eat and were actually Red Velvet Crinkle Cookies… it’s not everyday you receive very RED cookies from a child dressed up as a Power Ranger! Let’s just say we like to keep things interesting around our home and neighborhood. Yes, sometimes we ARE that family that people say, “What are they doing now!?” :)  
Red Velvet Crinkle Cookies

Ingredients:

  • 6 tablespoons butter
  • 1 cup powdered sugar
  • 1 teaspoon cornstarch
  • 1 box Red Velvet Cake Mix 
  • 2 large eggs

Directions:

1. Preheat oven to 375°F. Melt butter; set aside to cool. Place powdered sugar and cornstarch in small dish. Mix with a fork to blend.

2. Place cake mix, butter, and eggs in large mixing bowl. Mix by hand until well blended and a dough forms.

3. Form dough into 1-inch balls and roll in powdered sugar. Place on cool, ungreased baking sheets about 2 inches apart.

4. Bake, 1 sheet at a time, in center of oven for 9 to 11 minutes or until set. Cool 1 minute. Transfer to wire rack to cool completely.

5. Serve or store in airtight container.

  5. I just made these for my Valentine aka my husband. They smelled so good that I had to try one. I shouldn’t have!! They are so tasty! I am going to have to demonstrate some serious self control to not eat any more. :)
