Funfetti Pancakes

Funfetti Pancakes are a NEW tradition in our home for special days such as: birthdays, special milestones, back-to-school days, last day of school {remember my husband and I are both teachers, so yes we celebrate that day!} and anything else worth celebrating! Sprinkles on anything can make our boys smile even on the most miserable of sick days, so you can imagine their elation when they cut into their pancakes to find sprinkles! Pure Smiles! So join us; find something to celebrate, then go ahead and whip up this ‘ultra-special’ batch of pancakes for those special ones in your life! 

Ingredients: 

  • 1 1/2 cups Funfetti cake mix
  • 2 tbsp. oil
  • 1/2 cup milk
  • 1 egg

Directions:

1. Heat a lightly greased pan over griddle to medium-low heat.
2. Mix together the cake mix, oil, milk, and egg until combined.  Pour about 1/4 cup of batter onto the pan or griddle for each pancake, cooking until each side is lightly browned.
3. Serve pancakes traditionally (with butter and syrup) or funfettied (with whipped cream, sprinkles, and chocolate syrup).

Makes about 6-8 pancakes

My daughter would LOVE these, she always wants me to put sprinkles in everything, but making pancakes out of cake mix well that is just the ultimate going to have to make these for sure! I tried your recipe after searching for cake batter pancakes online because I knew someone else must have had my genius idea… I don’t know if maybe you were using extra-large eggs and I was using medium or if I made some other mistake, but the batter turned out way too thick. But even though the pancakes were kind of burned and simultaneously undercooked inside, they were still amazing and probably the greatest breakfast food in history.

    • Casey- The batter is thick, but if you add a few extra Tablespoons of milk it should be fine if you prefer a thinner batter! I typically use large eggs. They are a great fun breakfast treat every once in a while! :) Let me know how they turn out next time! :)

  8. I made these this morning for my just turned 3 year old. He devoured them, my husband said they were the best ever. The batter was thick, but I used a fork to spread it out and had to play with the temperature to get it right and not scorched. I also made a dipping icing : about 3/4 c milk, 1c powdered sugar an about 2 oz. cream cheese and blended it. Delicious! Thanks for posting.
