Homemade Baja Style Fish Tacos

Living in Southern California for the first six years of our marriage, my husband fell in love with fish tacos! I remember thinking how strange they sounded at first, when I heard of their popularity. Luckily, I tried them anyway and absolutely loved them! Now in Texas, we have been making our own Fish Tacos. I have been ‘playing’ with a few different recipes, but I’m excited to share our favorite “Homemade Baja Style Fish Taco” recipe with you! 

Ingredients:

Fish

  • Cod or Tilapia fillets
  • 1 cup of all-purpose flour
  • 1 cup of beer
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • canola oil
‘Special White Sauce’ (similar to Rubio’s) 
  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise (if you don’t care for mayonnaise, or want a healthier spin replace it with another 1/2 cup of yogurt)
  • 1 lime, juiced
  • 1 jalapeno pepper, minced
  • 1 teaspoon minced capers
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried dill weed
  • 1 teaspoon ground cayenne pepper

Extras
  • tortillas
  • finely shredded cabbage
  • lime, sliced
  • hot sauce

Directions:

1.  Begin by making the beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don’t worry about a few lumps).

2. Preheat oil in a wok (enough to cover the fish fillets), or use a deep-fryer to 375 degrees F.

4. Dust fish pieces lightly with flour, dip into the beer batter, and then fry until a crispy, golden brown. Drain on paper towels. Warm tortillas, or make Quesa Tacos to put them into. To serve, place fried fish in a tortilla, and top with shredded cabbage, and ‘special’ white sauce.
