Light and Fluffy Pancakes (with cottage cheese)

Happy National Pancake Day!
My husband and I first enjoyed these pancakes at a mountain-side bed and breakfast on our 1st Wedding Anniversary. My husband (a pancake connoisseur) has raved about these pancakes and how light and fluffy they are for over 6 years! Not only are these low in calories, but they are also high in protein! No more of that over-stuffed pancake feel afterwards! So delicious!

Ingredients:

  • 1 cup Cottage Cheese
  • 1/3 cup Flour (white or whole wheat)
  • 2 tablespoons Canola Oil
  • 3 large Eggs (lightly beaten)
  • Cooking Spray

 

 

Directions:

1. Preheat the griddle or pan. Lightly beat 3 eggs in a small bowl and set aside.

2. Next, combine the flour, oil, and cottage cheese. After the ingredients are mixed throughly, add in the eggs.

3. Finally, spray the griddle or pan lightly with cooking spray before pouring in the batter. Cook until golden brown on both sides and throughly cooked in the middle.

  3. Made these tonight for dinner…LOVED them!! Like nothing I’ve ever had before. At first I thought there must be some ingredients missing but once I cooked up the first “trial” pancake and tasted it I knew it was all good! So yummy and so nice not to have that bloated feeling I usually feel after normal pancakes :) I will be making these again, especially when we need a protein packed breakfast!
