When I hear the word ‘leprechaun’ the first image I see is the little leprechaun from Lucky Charms! Lucky Charms Cereal Bars were a favorite of mine to make for my students when I was teaching lower elementary. They were a quick, easy, fun treat that always got the kids thinking about their favorite kids cereal in a new way. The clovers, stars, hearts, moons, and stars began to take on a whole new meaning when we talked about that these ‘charms’ were what some people believed their ‘luck’ came from. It always sparked many interesting discussions and stories. So whether you believe in actual ‘lucky charms’ or you simply just love the cereal {raising my hand}, these are a fun treat to make for your child’s classroom, the neighbor kids, or your family this St. Patrick’s Day! Maybe they will bring a little luck your way too… you never know!?
Ingredients:
- 6 cups of Lucky Charms cereal
- 1 bag of Mini Marshmallows
- 1/2 cup of Margarine/Butter
- 1 teaspoon Vanilla Extract
- Rainbow Sprinkles (optional)
Directions:
1. Begin by greasing a 9×13 pan with non-stick cooking spray.
2. Melt the margarine and marshmallows on low-medium heat in a large pot.
3. When they are completely melted, add in the extract and stir well. Remove from heat.
4. Combine the cereal into the marshmallow mixture and stir well.
5. Next, pour the cereal into your greased pan and press it down evenly.
6. Sprinkle lightly with rainbow sprinkles (optional). Allow to cool completely before cutting.
7. Cut into bars and serve.
