No-Bake Sand Castle Cake {Rice Krispies}

Last week we celebrated my mom’s BIG 60th birthday in beautiful Aruba! Big Brother has been asking me what type of cake we were going to make for Grandma for about two months and honestly I didn’t think it would be possible. Until… I saw this fabulous idea of a Sand Castle Cake linked up on a Saturday Show & Tell by Beth at Hungry Happenings! It was PERFECT! My mom loves the beach, she loves Rice Krispie Treats, and best of all it was an easy cake to take and make on a vacation! Wahoo! 

The cake was a HUGE success! I packed the marshmallows and Rice Krispie Cereal in our suitcase and only needed to purchase the margarine/butter once arriving in Aruba! My husband, our boys, and myself whipped the cake together in about 45 minutes when Grandma stepped out of the condo. When she came back we surprised her with an ‘early’ Birthday cake {because we all seflishly wanted to enjoy it all week! haha}! 

This is such a fun cake to make for ‘beach lovers’ and is great for children to help make. I love that you can personalize it for your special occasion and make it as elaborate as you desire; so grab your sand toys {clean them} and get building! 

Ingredients:

  • 6 cups of Rice Krispie Cereal
  • 1 bag of Mini Marshmallows
  • 1/2 cup of margarine/butter
  • 1 teaspoon vanilla extract (optional; I did not use because it was not available)

Materials:

  • Sand Castle Molds
  • Nonstick Cooking Spray (or you can grease with butter and a paper towel)

Directions:

1. Prep Sand Castle Molds by spraying them with non-stick spray.

2. Melt the butter in a large pot on medium to low heat; add in the marshmallows and stir until completely melted.

3. Remove from heat and stir in Rice Krispie Cereal.

4. Allow the cereal mixture to cool to the touch. Press into molds and let set. You can place in the refrigerator to quicken the set time if needed.



5. Flip the molds over of a covered surface and lightly tap to remove.

6. Finish with gummi fish, chocolate seashells, real seashells, etc. Crumble leftover Rice Krispie cereal or brown sugar around the base to create a sandy look.
