This recipe is for pumpkin lovers and non-pumpkin lovers alike! It’s subtle hint of pumpkin flavor along with cinnamon and chocolate make this a recipe hard to resist! This is by far, my FAVORITE pumpkin recipe! As thoughts of Fall began bombarding my Pinterest feed recentlly, I could not stop thinking about these muffins. So in the final week of August, I caved and baked a batch. My boys have been all sorts of helpful this week in hopes of getting another muffin! I absolutely love baking muffins in my mini-muffin pan as they are the perfect size for the little hands in our home, as well as a good portion size for the adults!
Lately, my husband and I have been cutting down on the sugar and really working hard at doing a better job at eating healthier. We encourage our boys to eat well-balanced meals and need to make sure we are doing so as well! I have begun substituting healthier alternatives into my baking as you will see below. You will notice an original recipe first, then a ‘skinny version’ below. You can pick and choose the substitutes you want to use!
Ingredients:
Original
- 3 1/3 c. flour
- 2 1/4 c. sugar
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 2 c. pumpkin
- 4 eggs
- 1 c. oil
- 2/3 c. water
- 1 tsp. vanilla
- 1 1/2 c. chocolate chips
- 3 1/3 c. whole wheat flour
- 1 1/2 c. sugar (Splenda or another artificial sweetener)
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 2 c. pumpkin
- 8 egg whites
- 1 c. applesauce
- 2/3 c. water
- 2 tsp. vanilla
- 1 1/2 c. chocolate chips (one doesn’t mess with chocolate chips)
Directions:
1. Mix together first 5 ingredients. Mix together well and then add the liquid ingredients.
2. Next, add in the chocolate chips. Spoon into muffin tins.
3. Bake at 350 for 15 minutes.
Makes about 2 1/2-3 dozen muffins.
* This recipe makes awesome pumpkin bread too!*
